Ten Minutes by Tractor Wallis Chardonnay is made with careful selections of fruit from the Wallis Vineyard at Main Ridge on the Mornington Peninsula. It is produced only in vintages that reach a quality benchmark.
The winery's lowest lying site, the vineyard is nestled in the Cotton Tree Creek valley. It receives long days in full sun, yet its gentle north-east slope draws cooling sea breezes down through the vines at night.
Handpicked grapes are whole bunch pressed. The unsettled juice is transferred into 15% new barrels, some 228 litre French oak and some 600 litre Austrian oak. Fermentation occurs with natural yeast.
Partial malolactic fermentation and 10 months of maturation take place in barrel. There is no lees stirring, which maintains the wine's fresh, taut characters.
Deep yellow, Ten Minutes by Tractor Wallis Chardonnay's hallmark is its firm citrus acidity, with layers of stone fruits, minerality and spicy oak. Cellaring potential is 10 years.
