Ten Minutes by Tractor Estate Pinot Noir is a barrel selection from the winery's individual vineyard wines, chosen to create a pure expression of Mornington Peninsula Pinot Noir.
Handpicked parcels of fruit mostly destemmed, with up to 20% left as whole bunches. The destemmed portion are kept as whole berries without crushing.
The grapes are placed into a mix of concrete and stainless steel tanks and held at cool temperatures to delay the start of wild yeast fermentation. During fermentation, the juice sees pumping over with some plunging towards the end.
After 25-30 days on skins, the wine is pressed and transferred to French oak for natural malolactic fermentation and around 12 months of maturation.
Rich crimson, Ten Minutes by Tractor Estate Pinot Noir displays ripe fruit flavours, heady spices and savoury tannins. Cellaring potential is eight years.
