Carrodus Viognier
Wine
Yarra Yering Carrodus Viognier is made from some of Australia's oldest Viognier vines. It draws from three estate blocks: the 1969 original vineyard, the 1973 Underhill Vineyard and the 1990 New Territories.
Tiny yields of hand harvested fruit is crushed with little skin contact before basket pressing over many hours. Juice is run off to seasoned oak barrels for primary fermentation without any clarification.
Juice not pressed from the skins is frozen to be used in the Dry Red Wine No. 2 ferment weeks later. Malolactic fermentation and maturation for 11 months follows. The wine is bottled via gravity without filtration.
Vibrant yellow, Yarra Yering Carrodus Viognier is a silky wine with firm tannins, uncommon in white wine, that carry the flavour to a long, lingering finish. Cellaring potential is five years.
