Tamar Ridge Sauvignon Blanc is sourced from vineyards at Kayena and The Hazards in the Tamar Valley, near Launceston in northern Tasmania.
Immediately after pressing, the juice is run off skins and cold settled. A small percentage is kept on full solids for 10 days to build weight.
Fermentation occurs under strict temperature control using protective handling techniques. Around 20% of the juice ferments in seasoned French oak for greater flavour complexity.
Pale green, Tamar Ridge Sauvignon Blanc has zesty tropical fruit flavours with subtle savoury complexity. Cellaring potential is two years.
