Tahbilk Eric Stevens Purbrick Cabernet Sauvignon honours the man who headed the winemaking at Tahbilk for over 40 vintages. It represents the winery's best of vintage Cabernet Sauvignon.
Old vines, including Cabernet plantings from 1949, are hand harvested. The fruit is vinified traditionally using a winemaking approach that has not differed significantly since 1860.
The fruit is crushed and pumped into the winery's original oak fermenters. Cultured yeasts are used, and the juice sees twice daily pump overs. Maturation occurs over 18 months in French oak barrels, half new.
Once bottled, the wine is cellared for up to four years prior to release. It bears a Tahbilk label reproduced from the 1870s.
Bright garnet, Tahbilk Eric Stevens Purbrick Cabernet Sauvignon has generous dark fruit notes, dusty tannins, classy oak and a long finish. Cellaring potential is 20 years.
