Symphony Hill Wines Reserve Cabernet Sauvignon draws from the winery's high altitude, cold climate Granite Belt vineyard. The fruit ripens almost a month later than other cool climate regions.
The handpicked grapes are crushed and destemmed, then see an extended period of cold soaking. Fermentation is in stainless steel, variable capacity tanks which seal out oxygen. The wine then ages in French oak barrels for one year.
Deep inky red, Symphony Hill Wines Reserve Cabernet Sauvignon balances dark fruit flavours, integrated acidity and velvety oak. Cellaring potential is 10 years.
