Spinifex Bête Noir Shiraz, its French name meaning 'the dark beast', is a Shiraz blend sourced from several grower vineyards across the Barossa and Eden Valleys.
With a diversity of soils, altitudes and mesoclimates, vineyard age ranges between 25 and 120 years. The handpicked fruit is destemmed and fermented as whole berries with some whole bunch inclusion.
Fermentation takes place with indigenous yeast. Following pressing and élevage for 18 months in French oak the wine is bottled without fining or filtration.
Deep dark ruby, Spinifex Bête Noir Shiraz is perfumed with red fruit flavours. It is richly tannic, velvety and long. Cellaring potential is 20 years.
