The Philip Adrian Cabernet Sauvignon
Wine
Singlefile The Philip Adrian Cabernet Sauvignon is the winery's leading red wine, made only in exceptional vintages. It is named after the Singlefile patriarch Philip Adrian Snowden.
The grapes are grown on the Riversdale Vineyard at Frankland River, tucked into the north-west corner of Great Southern. The vines were planted in 1997 on deep gravel over clay soils.
The fruit is cold soaked in a small open fermenter for around two weeks with minimum pump overs followed by gentle extended maceration. The wine is then matured in new and 1-2 year old Bordeaux barrels for 14 months.
Once bottled, it is aged for a further 12 months before release.
Deep inky red, Singlefile The Philip Adrian Cabernet Sauvignon has vibrant red and dark berry flavours and supple, earthy tannins. Cellaring potential is 15 years.
