Shadowfax Macedon Ranges Pinot Noir blends handpicked grapes from the estate's Little Hampton, Midhill and Straws Lane Vineyards. It is a fine example of cool climate, high altitude Macedon Ranges Pinot Noir.
The fruit is destemmed, but not crushed, and placed into open fermenters. In some vintages, a portion is added as whole bunches. Fermentation occurs naturally with daily hand pump overs and limited plunging.
After 2-3 weeks on skins the wine is transferred to new and seasoned French oak hogsheads to develop prior to blending and bottling.
Bright garnet, Shadowfax Macedon Ranges Pinot Noir has brooding fruit flavours finely balanced with seams of ripe tannins. It finishes long, yet light on its feet. Cellaring potential is seven years.
