Macedon Ranges Chardonnay

Shadowfax Macedon Ranges Chardonnay draws fruit from the estate's Little Hampton and Midhill Vineyards. The altitude, and very cool nights, retain natural acidity in the grapes.

The fruit is firmly whole bunch pressed, exposing the juice to some skin contact to unlock the grapes' full flavours and impart phenolic texture. Natural fermentation occurs in 25% new French oak barrels.

Some barrels undergo malolactic fermentation for added depth. After 11 months the wine is racked and filtered prior to bottling.

Bright straw green, Shadowfax Macedon Ranges Chardonnay has rich fruit and wild ferment characters, oak complexity and long length. Cellaring potential is five years.
