Yering Station Cabernet Sauvignon is selected from hand harvested Reynella and CW44 Cabernet clones planted at the winery's Yarra Valley estate in the late 1990s.
The grapes are fermented with cultured yeasts in open fermenters and static tanks. Extended time on skins achieves a rich structure while retaining a supple palate. The wine matures for 18 months in new and seasoned French oak.
Brick red, Yering Station Cabernet Sauvignon is densely structured with tannins tightly wound around a core of dark berry fruits. Cellaring potential is 10 years.
