Piccadilly Valley Chardonnay

Petaluma Piccadilly Valley Chardonnay is a modern style of Australian Chardonnay. It is sourced from the winery's vineyards throughout the Piccadilly Valley, known for its cool climate and altitude.
Most of the fruit is destemmed, crushed and chilled to tank. A small portion is whole bunch pressed to a separate tank. Both are cold settled and inoculated with a chosen yeast.
The juices are transferred to French oak barrels for fermentation, around one third new and the remainder second and third use. As they reach sugar dryness, the parcels are inoculated for malolactic fermentation.
The barrels mature on lees for eight months, then are blended in tank and chilled to help clarify the wine. Filtration to bottle is the final step.
Straw yellow, Petaluma Piccadilly Valley Chardonnay is full flavoured and richly textured with stone fruit notes, creamy oak and alluring acidity. Cellaring potential is five years.
