Paringa Estate The Paringa Chardonnay is handpicked from the winery's oldest block of Chardonnay. A mere nine rows of vines, it is situated just outside of the winery’s doors at Red Hill South on the Mornington Peninsula.
The intent of Paringa's viticulture and winemaking is to preserve a pure expression of the site all the way through to bottle. The wine is only produced in the best vintages.
The whole bunch pressed, unclarified juice is fermented with wild yeast in 50% new French oak barrels. Malolactic fermentation and maturation occur over 12 months with monthly lees stirring.
Clean crisp yellow, Paringa Estate The Paringa Chardonnay has delicate stone fruit flavours, poised acidity and a long, savoury finish. Cellaring potential is six years.
