Mount Horrocks Cabernet Sauvignon is sourced from the winery's organically farmed Alexander Vineyard at Watervale in the Clare Valley, situated at a cool 475 metres altitude.
The grapes are handpicked during a tiny ideal harvest window. They are open fermented on skins, receiving gentle hand plunging several times a day. The juice spends 10-12 days on skins to build complex tannins.
Maturation takes place in French oak barrels, one third new. After 18 months the wine is bottled. Only tiny quantities are produced each year.
Deep dark purple, Mount Horrocks Cabernet Sauvignon has vibrant tannins wrapped in dense berry flavours and well integrated oak. Cellaring potential is 15 years.
