Main Ridge Estate Chardonnay is predominantly I10V5 clone Chardonnay grown in the rich volcanic soil of one of the estate's higher Mornington Peninsula vineyards.
The grapes are crushed, destemmed and left on skins for six hours. Following basket pressing, the juice settles for 24 hours. Both alcoholic and malolactic fermentation occur naturally in French oak barrels, one quarter new.
The lees are stirred occasionally during maturation. After 12 months in oak, the wine is fined and bottled.
Bright yellow, Main Ridge Estate Chardonnay has restrained fruit flavours, creamy texture and a persistent line of acidity. Cellaring potential is five years.
