Heritage Single Vineyard Cabernet Sauvignon

Juniper Estate Heritage Single Vineyard Cabernet Sauvignon draws from dry grown Cabernet vines at Wilyabrup, planted in 1973 in Margaret River's very early days.

The fruit is handpicked in a number of small batches. After cold soaking, it is fermented in a mix of hand plunged open fermenters and pumped over closed fermenters.

Extended post-ferment maceration on skins follows. The wine is then transferred to new and seasoned French oak barrels for malolactic fermentation and 18 months of maturation.

Small quantities of complementary varieties are trialled at blending. Typically tiny portions of Petit Verdot and Malbec add depth and complexity to the final wine.

Deep red, Juniper Estate Heritage Single Vineyard Cabernet Sauvignon has dense dark fruit flavours, strong tannins and length. Cellaring potential is 30 years.
