Howard Park Scotsdale Cabernet Sauvignon draws from the estate Abercrombie Vineyard in Mount Barker. The north facing, elevated site captures ample sun, fully ripening the grapes.
The fruit ferments in stainless steel, with the cap of grape skins carefully managed to extract tannins and varietal flavour. At dryness, selected parcels remain on skins to enhance the tannin profile, while others are pressed.
Maturation is in new and seasoned French oak. After light egg white fining and filtration, the wine is bottled.
Deep crimson, Howard Park Scotsdale Cabernet Sauvignon is refined with plush red fruit flavours and long supple tannins. Cellaring potential is seven years.
