Clos Otto Shiraz

Hentley Farm Clos Otto Shiraz is named in honour of Otto Kasper, who planted his vineyard on a perfectly positioned site on the western banks of Greenock Creek in the Barossa Valley.
Tended with antiquated machinery and a well practiced hand, the vineyard's yields are tiny and its flavours ultra-rich.
The destemmed fruit is left on skins in open top fermenters for up to 12 days. After an early heat spike, the temperature is lowered to slow the ferment. The fermenting juice is pumped over and hand plunged.
The wine is basket pressed to French oak, two thirds new and the remainder second use. It undergoes natural malolactic fermentation and ages for six months.
It is then blended and returned to barrel for a total of 22 months in oak. There is no fining or filtration at any stage of production.
Inky crimson, Hentley Farm Clos Otto Shiraz is the flagship. It is opulent yet elegant with fine grained tannins, balanced acidity and exceptional length. Cellaring potential is 20 years.
