Riesling

Forest Hill Vineyard Riesling is typically a blend of fruit from the 1975 Riesling plantings on Block 2 and a small component from the younger Highbury Fields block.

Most of the grapes are whole bunch pressed, although a small parcel is destemmed and crushed before pressing. The juice is chilled, cold settled and fermented at cool temperatures to retain vitality in the final wine.

One parcel spends a short period on lees post ferment, but the remainder are immediately racked. Once blended the wine is filtered and bottled.

Bright straw green, Forest Hill Vineyard Riesling is racy and energetic with citrus flavours and lingering minerality. Cellaring potential is five years.
