Chardonnay

Forest Hill Vineyard Chardonnay is drawn from three sites on the estate's cool climate vineyard in Mount Barker: Block 8, Block 9 and Highbury Fields.

Some fruit parcels are whole bunch pressed while others are crushed before pressing. The juice retains high solids for fermentation in new and seasoned French oak barrels at cool temperatures. Wild yeasts are used.

Post ferment, the wine sees partial malolactic fermentation and light lees stirring. After nine months of barrel maturation to achieve balance, it is bottled.

Bright straw, Forest Hill Vineyard Chardonnay has vibrant stone fruit flavours and a long finish of natural acidity. Cellaring potential is five years.
