Block 5 Cabernet Sauvignon

Forest Hill Vineyard Block 5 Cabernet Sauvignon brings together the best parcels of fruit from the winery's oldest Cabernet vines, planted in 1975. All the fruit is handpicked.

The grapes are destemmed, crushed, chilled and sent to closed fermenters for inoculation. The ferments are pumped over twice daily with aeration and kept at around 25°C. In total they spend three weeks on skins.

The wine is then pressed to new and seasoned French oak for malolactic fermentation. After ageing for 18 months, it is blended, fined with egg whites and bottled.

Dark red, Forest Hill Vineyard Block 5 Cabernet Sauvignon is full bodied with dark fruit flavours, notes of spice, silky tannins and a long finish. Cellaring potential is 12 years.
