Command Shiraz
Wine
Elderton Command Shiraz is grown in a single block at the estate vineyard in Nuriootpa. Planted in 1894, the gnarled Barossa vines grow in alluvial silt over red brown earth and limestone.
The fruit is hand harvested in small parcels over five weeks. The grapes ferment in open top concrete fermenters with chilled ferments, hand pump overs and the cap submerged with oak header boards.
The wine completes fermentation in new French and American oak puncheons, where it also undergoes malolactic fermentation. Altogether the wine spends 30 months in barrel.
Deep crimson, Elderton Command Shiraz has opulent dark fruit flavours, rounded tannins and a very long finish.
A classic old vine Barossa Shiraz. Cellaring potential is 15 years.
