Dowie Doole DD Shiraz is sourced from two estate vineyards: the Dowie Vineyard at Blewitt Springs and the Doole Vineyard at Tatachilla.
The Blewitt Springs site lies on cool slopes and sandy soils while the Tatachilla site is more Mediterranean with richer soils. They each produce fruit with distinct characters.
The two vineyard parcels are kept separate for vinification. The grapes are destemmed, cold soaked and fermented with 2-3 pump overs each day. Once pressed, the wine matures in a mix of French and American oak.
Each barrel is then tasted and carefully assessed. The best parcels are selected for the final blend.
Deep crimson, Dowie Doole DD Shiraz has peppery dark fruit flavours with a fine tannin line. Cellaring potential is 10 years.
