Domaine A Cabernet Sauvignon is grown in the estate Stoney Vineyard in Tasmania's Coal River Valley. The smallest, most intense grapes are picked from its higher vineyard slopes.
The wine is a Bordeaux style blend, predominantly Cabernet Sauvignon with small amounts of Merlot, Cabernet Franc and Petit Verdot.
Domaine A Cabernet is made from the finest fruit each vintage. The grapes are vinified in small batches, undergoing open fermentation with regular racking and hand plunging. They see extended time on lees.
The wine matures in 100 per cent new French oak for 2-3 years. It is bottled unfined and unfiltered, and spends a further two years in bottle before release.
Deep ruby, Domaine A Cabernet Sauvignon has ripe dark fruit flavours, seamless elegance and fine tannic structure. Cellaring potential is 10 years.
