Delatite Estate Pinot Gris is sourced from the biodynamically farmed estate vineyard. The site rests on the rolling hills at the base of Mount Buller in north-eastern Victoria.

Each block is handpicked at optimum ripeness and vinified separately in the winery. The fruit whole bunch pressed, then the juice undergoes wild yeast fermentation. A portion ferments in seasoned oak puncheons.

The wine matures on lees for a year with occasional stirring to help release the wild yeast characters. Prior to bottling, it sees only minimal sulphur addition and no fining.

Pale straw, Delatite Estate Pinot Gris has flavours of ripe stone fruit with hints of spice and oak complexity. Cellaring potential is five years.
