Wine
del Rios Shiraz is sourced from the steeply sloping estate vineyard at Mount Anakie. The vines, grown in sandy grey alluvial soil, are pruned, shoot thinned and harvested by hand.
The fruit is mostly crushed and destemmed, with small portions left as whole berries and bunches in some years. Fermentation occurs in open tanks, typically receiving hand plunging.
After several weeks, the wine is pressed to tank for malolactic fermentation. It is then transferred to new and seasoned French oak barrels age for 12-14 months prior to blending and bottling.
Dense red purple, del Rios Shiraz is a medium bodied, cool climate wine with rich black fruit flavours and suede-like tannins. Cellaring potential is 10 years.
