Sauvignon Blanc

del Rios Sauvignon Blanc is sourced from the estate vineyard in the Moorabool Valley, north of Geelong. The vines, planted in the late 1990s, grow in rich black volcanic soil.
The fruit is chilled and air bag pressed as whole bunches. The juice is typically wild yeast fermented in seasoned French oak barrels, though in some vintages there is a tank fermented portion.
After malolactic fermentation, the wine is sulphured and aged for nine months. It is then racked and blended to a stainless steel tank prior to bottling.
Pale straw green, del Rios Sauvignon Blanc has subtle fruit and oak flavours yet generous texture and minerality. Cellaring potential is five years.
