Wine

Dalwhinnie Southwest Rocks Shiraz is drawn from a single vineyard block on a rocky outcrop of the Moonambel vineyard. The vines are grown from Best's 1860s Concongella cuttings planted in 1995.

This fruit is handpicked at optimum ripeness. Vinification is the same as that for The Pinnacle Shiraz. The grapes are destemmed with a portion left as whole berries, then placed in an open fermenter to cold soak.

Fermentation is temperature controlled and extended maceration follows. After pressing, the wine is pumped straight to barrel for malolactic fermentation. It matures in French oak for 18 months before bottling.

Deep red purple, Dalwhinnie Southwest Rocks Shiraz has sweet red and black cherry flavours with earthy spices. Layered, chalky tannins provide structure. Cellaring potential is 12 years.
