Cottage Block Pinot Noir

Dalrymple Cottage Block Pinot Noir is sourced from the estate grown Cottage Block in Pipers River, Tasmania. The vines are all tended by hand.
The block is well sheltered from cool north-westerly winds, meaning it is slightly warmer than the other estate blocks. Combined with the cool nights and low rainfall that typify the region, the result is quality fruit.
Most of the fruit is destemmed; the rest is left whole. It sees gentle hand plunging 2-3 times a day until fermentation is complete. After pressing, the wine is racked to new and seasoned French oak barrels.
During 10 months in barrel, the wine undergoes malolactic fermentation. Selected parcels are then blended and bottled. The wine is released with 15 months bottle age.
Deep red, Dalrymple Cottage Block Pinot Noir has fleshy fruit flavours balanced by natural acidity and lingering spicy, savoury notes. Cellaring potential is eight years.
