The Vicar Shiraz

Chapel Hill The Vicar Shiraz is an annual selection of outstanding vineyard parcels of McLaren Vale Shiraz. It is the winery's attempt to capture McLaren Vale in a bottle.
Each fruit parcel is fermented separately in small batch fermenters with gentle plunging of the skins and seeds. All the ferments are left on skins for a minimum of 10 days.
After careful basket pressing, the free run and pressings are combined. Maturation occurs over 20 months in French oak barrels, with periodic rack and returns to integrate the tannins into the structure of the wine.
The wine is made with minimal additions and is allowed to clarify naturally. At bottling it is neither fined nor filtered.
Dark crimson, Chapel Hill The Vicar Shiraz is full bodied with cascading layers of varietal flavour, savoury texture and grainy tannins. Cellaring potential is 15 years.
