Castle Rock Estate Pinot Noir is sourced from the cool climate estate vineyard, nestled on the eastern slopes of the Porongurup mountain in Western Australia.
The winery is built on two levels, making use of the natural slope of the land. The fruit is crushed and fermented on the upper level, then gravity fed into the press below. This ensures that flavours and tannins are not over extracted.
Maturation takes place in French oak prior to bottling on site.
Pale red, Castle Rock Estate Pinot Noir has red fruit flavours with silky textures, a tight acidity and fine tannins. Oak adds subtle charry notes. Cellaring potential is seven years.
