Castelli Estate Riesling is sourced from several Great Southern vineyards. Each vineyard plays a role, bringing different features to the overall wine.

The fruit is harvested in the cool of night to preserve freshness. The grapes see some cold maceration to maximize texture. Early separation of the free run juice and pressings enhances the wine's delicacy.

Only the free run juice is collected. The wine is fermented under temperature controlled conditions using cultured R-HST yeast.

Golden straw, Castelli Estate Riesling has lifted floral aromas, a balanced citrus spine and talcy acidity. Cellaring potential is seven years.
