Il Liris Red
Wine
Castelli Estate Il Liris Red is typically a blend of 55% Cabernet Sauvignon, 35% Shiraz and 10% Malbec. The fruit is sourced from across the Great Southern region of Western Australia.
The grapes are cold soaked and given a clean, warm ferment with cultured yeasts. Time on skins is typically three weeks for the Cabernet and a little less for the Shiraz and Malbec.
Three quarters of the wine matures in new French oak barrels; the remainder matures in one year old oak. Only the best barrels are selected for the final blend.
Deep crimson, Castelli Estate Il Liris Red is powerfully structured, finely balanced delivering myriad complexity. Cellaring potential is 12 years.
