Castelli Estate Il Liris Chardonnay is inspired by the Grand Cru producers of Chablis in France.

It is a bold attempt to make a wine in this style with grapes from the cool climate of Denmark in Western Australia. It has been described as a Chardonnay for Riesling lovers.

The grapes are handpicked, chilled and whole bunch pressed directly to French oak for wild fermentation. Typically 70% of the oak is new, the remainder one year old.

To retain natural acidity and freshness only a small portion is allowed to complete malolactic fermentation. Regular lees stirring develops mouthfeel, texture and structure.

Pale straw, Castelli Estate Il Liris Chardonnay has bright citrus flavours, tight structure and piercing acidity. Cellaring potential is six years.
