Empirica Pinot Gris

Castelli Estate Empirica Pinot Gris is sourced from the Frankland River in Western Australia's Great Southern. The grapes are predominantly Pinot Gris with some Chardonnay added.

The fruit is machine harvested in the cool of night to optimize flavour and freshness.

Different small batch techniques are used. Only the free run juice is collected. The softest pressed portion of juice is fermented in stainless steel; the remainder in small, seasoned oak.

A cultured Alsace yeast is applied. All batches are fined separately, then blended to taste.

Pale yellow, Castelli Estate Empirica Pinot Gris is made in a dry style. It has delicately perfumed citrus flavours and rich layered texture. Cellaring potential is three years.
