Castelli Estate Chardonnay is a cool climate Chardonnay sourced from two Pemberton vineyards in Western Australia's Great Southern.

It is harvested in the cool of night to retain fruit flavours. The fruit is chilled and whole bunch pressed directly to French oak for fermentation.

To retain natural acidity only a small portion of the wine is allowed to complete malolactic fermentation. During maturation the lees are stirred regularly.

Pale straw, Castelli Estate Chardonnay is intense with finely woven textures and a precise mineral core. Cellaring potential is eight years.
