Castelli Estate Cabernet Sauvignon is a blend of 95% Cabernet Sauvignon and 5% Malbec. It is a typical cool climate Frankland River grown Cabernet.

The grapes are cold soaked and given a clean, warm ferment with cultured yeasts. Skin maceration is achieved with twice daily pump overs. The juice spends at least three weeks on skins.

The wine matures for 15 months in new and seasoned French oak.

Inky red, Castelli Estate Cabernet Sauvignon is medium bodied, its red fruit flavours balanced with layered oak tannins. Cellaring potential is 10 years.
