Chardonnay

Cape Mentelle Chardonnay is grown in the estate's Chapman Brook and Crossroads Vineyards in the cooler southern part of Margaret River. It is inspired by traditional Burgundy whites.
Each vineyard block has a different personality, so picking is decided only by taste. The handpicked bunches are raised into a membrane press for gentle whole bunch pressing.
After pressing the juice is sent straight to French oak barrels, about one third new, for wild fermentation and some malolactic fermentation. The wine matures in barrel for 10 months prior to bottling.
Bright pale straw, Cape Mentelle Chardonnay has aromatic complexity and a fine, textured palate with a seamless finish. Cellaring potential is 10 years.
