Byron & Harold The Partners Pinot Noir represents the winery’s top tier Pinot Noir, sourced from dedicated growers across Western Australia's Great Southern region.
A blend of handpicked and machine harvested fruit is destemmed and crushed to one tonne fermenters. It is cold soaked, then allowed to naturally warm before inoculation.
The ferments are pumped over and plunged twice a day, with the temperature held at 25°C to prevent the over extraction of tannins locked in the skins.
The wine is then transferred to barrel for malolactic fermentation, allowing the soft integration of grape and oak tannins. After maturing for around 10 months the wine is fined prior to bottling.
Ruby purple, Byron & Harold The Partners Pinot Noir has delicate fruit and spice notes with subtle oak, silky tannins and a savoury finish. Cellaring potential is seven years.
