The Partners Chardonnay

Byron & Harold The Partners Chardonnay is sourced from dedicated growers in the Great Southern region of Western Australia.
The grapes are picked in the coolest period of the night and transported directly to the winery. They are crushed, pressed to tank and cold settled, then racked and inoculated with cultured yeast.
Fermentation occurs in French oak barrels. Post ferment the lees are stirred weekly until the desired balance between oak, lees and fruit is achieved. Malolactic fermentation is not encouraged.
After around 10 months of maturation, the wine is blended and fined in preparation for bottling.
Pale straw, Byron & Harold The Partners Chardonnay has stone fruit flavours, hints of toasty oak and a firm, fresh acidity. Cellaring potential is five years.
