Estate Cabernet Sauvignon

Blue Pyrenees Estate Cabernet Sauvignon is made with select parcels of grapes grown at the estate vineyard in the Pyrenees. The region is known for its complex, cool climate Cabernet.
The fruit is fermented to dryness in small open fermenters and larger static fermenters. The wine then matures for 24 months, primarily in a mix of seasoned French and American oak. A small portion is aged in tank.
Ruby red, Blue Pyrenees Estate Cabernet Sauvignon is medium bodied with ripe dark fruit flavours, abundant tannins and a persistent dry finish. Cellaring potential is 10 years.
