Riesling Dry

Bellarmine Riesling Dry is sourced from one of the few vineyards in Pemberton to grow Riesling. The fruit is harvested in the cool of night.

From the initial fruit crush, only the first cut of free run juice is used; it is considered the highest quality juice. After 48 hours of cold settling, the clear juice is racked to a new stainless steel tank away from the solids.

Fermentation occurs with an inoculated yeast. It is carefully temperature controlled, ensuring a steady ferment to optimize the natural fruit flavours and aromas. No oak is used at any stage.

Pale straw, Bellarmine Riesling Dry is aromatic and full of citrus and floral characters, with mineral notes and a crisp, clean finish. Cellaring potential is 12 years.
