Ashton Hills Estate Pinot Noir is handpicked from the winery's Piccadilly Valley vineyard. The site is one of the highest and coldest vineyards in the Adelaide Hills.
The wine is traditionally a blend of the winery's five preferred Pinot Noir clones. Each is wild fermented separately, with some whole bunches added to enhance aromatics and structural complexity.
Each clonal parcel is basket pressed to new and seasoned French barrels to mature for 10 months on lees. The wine is racked prior to bottling without filtration.
Deep garnet red, Ashton Hills Estate Pinot Noir is dense with exotic red fruit flavours, silky firm structure and bright acidity. Cellaring potential is seven years.
