Amelia Park Reserve Cabernet Sauvignon represents the best parcels of Cabernet for the vintage, identified early in the season and reserved for this wine.
The wine is mostly Cabernet Sauvignon, with small inclusions of Petit Verdot and Malbec. It is all grown on a single vineyard at Wilyabrup in Margaret River and harvested in the cool of night.
The fruit is crushed and destemmed to static fermenters. Fermentation occurs at cool temperatures with minimal pump overs, ensuring the delicate extraction of colour and flavour.
After up to a month resting on skins, the wine is pressed to French oak barrels, one third new, to mature for 18 months.
Inky red, Amelia Park Reserve Cabernet Sauvignon is finely structured with lush red berry flavours and smooth tannins. Cellaring potential is 12 years.
