Wine

All Saints Estate Rare Rutherglen Muscadelle has been grown at the winery since it was founded in 1864. The long, warm autumn days at Wahgunyah ripen the fruit to the high Baume levels essential for the style.

The grapes are picked when their sugar concentration is high. Cold soaking before fermentation swells any shrivelled berries and extracts flavour from the skins. The fruit is then crushed to release its sweet, concentrated juice.

Fermentation is halted by the addition of neutral alcohol. It settles for a few days then is transferred to barrel for maturation. The wine is a blend of selected over 20 year old vintages, racked to bottle as required.

A deep amber, All Saints Estate Rare Rutherglen Muscadelle's age, combined with its rancio characters and blending, results in intense raisin and molasses flavours.

Aged in barrel, it is not intended for bottle maturation. Drink within a year of purchase.
