Cathedral Pinot Noir

William Downie Cathedral Pinot Noir blends fruit from the Little Cathedral Vineyard in Upper Goulburn with Mornington Peninsula grapes. The sites lie at 350 metres and 40 metres elevation respectively.
The fruit is destemmed but not crushed. The winemaking remains simple: native yeasts are used, and there are no punch downs, pump overs or temperature control.
After around three weeks on skins the wine is pressed to stainless steel tanks for malolactic fermentation and maturation. There is only a small addition of sulphur prior to filtration and bottling.
Vibrant crimson, William Downie Cathedral Pinot Noir has bright, fleshy fruit flavours with ample complexity and regal structure. Cellaring potential is seven years.
