Reserve Chardonnay

Seville Estate Reserve Chardonnay is mainly sourced from the winery's original 1972 vines, grown in the cooler southern part of the Yarra Valley.
Produced only in small quantities, and only in exceptional years, it represents the very best of Seville Estate Chardonnay.
The fruit is handpicked and gently whole bunch pressed. The juice is run directly to tank to settle overnight, then gravity fed to barrel.
It ferments naturally in new and seasoned French oak from a range of coopers, lending oak complexity to the wine. Maturation continues on lees for 10 months. Malolactic fermentation is not encouraged.
Pale yellow, Seville Estate Reserve Chardonnay has purity of fruit and great balance, with refined acid delivering length to the finish. Cellaring potential is seven years.
