Cornelius Norfolk Vineyard Pinot Noir
Wine
Scotchmans Hill Cornelius Norfolk Vineyard Pinot Noir draws from the Norfolk Vineyard on Victoria's Bellarine Peninsula. The fruit, all the MV6 clone, is handpicked at optimal ripeness.
Most of the grapes are destemmed, though about 25% are included as whole bunches. After five days of cold soaking, open fermentation begins with wild yeasts.
The fermenting juice is hand plunged once a day until sugar dryness is reached, then it is pressed to barriques from Troncais in France. One third of the oak is new, the remainder 1-2 years old.
The wine matures for 18 months before the final blend is assembled. Prior to bottling, it is fined and filtered.
Deep red, Scotchmans Hill Cornelius Norfolk Vineyard Pinot Noir has rich plum and cherry flavours, sappy whole bunch notes and savoury oak. Cellaring potential is 10 years.
