Fraser Gallop Estate Chardonnay is grown on a gentle, south facing slope of Margaret River's Wilyabrup Valley. The vines are close planted and unirrigated.
The whole bunch grapes are gently pressed, minimizing harsh characters in the juice. Fermentation is initiated by wild yeasts.
The wine matures in seasoned French oak and stainless steel barrels. The oak influence is kept to a minimum, the fruit takes centre stage. It is kept on lees to build texture.
Depending on the vintage, some parcels undergo partial malolactic fermentation to temper the wine's high acidity.
Straw green, Fraser Gallop Estate Chardonnay has bright fruit flavours, chalky tannins and salivating acidity. Cellaring potential is five years.
