Dr McMahon Pinot Noir
Wine
Seville Estate Dr McMahon Pinot is named after Dr Peter G. McMahon, who founded Seville Estate in 1972. It draws from estate grown old vines in the upper Yarra Valley.
The fruit is handpicked into small buckets in the cool early morning. Bunch selection is done in the vineyard. Fruit that makes the grade is taken directly to the winery.
The grapes are placed as whole bunches (no destemming) into new oak barrels. Wild yeast fermentation takes place over many weeks, followed by natural malolactic fermentation.
The wine is then drained and the skins are pressed directly back to one of the barrels. After 10-12 months of maturation, the wine is bottled with no fining or filtration.
Red purple, Seville Estate Dr McMahon Pinot Noir is immensely layered and complex with dark fruit flavours, spicy oak and firm tannins. Cellaring potential is 10 years.
